Mexican Menudo

Ingredients

2 onions, quartered
4 pounds Tripe
4 cloves garlic, minced
1 28 oz. Can hominy, drained
1 tablespoon crushed oregano
1 tablespoon tomato paste
1 teaspoon cayenne pepper, or to taste

Preparation

Wash tripe and cut into 1x2” pieces or smaller.

Add tripe to onions, garlic, oregano, coriander, salt, and cayenne pepper.

Bring to boil; reduce heat and simmer 3-4 hours.

Stir in tomato paste to dissolve and add hominy during the last hour.

Raise heat to thicken the soup for the last 30 minutes or so.

Serve, providing dishes of chopped onion, coriander, and chili peppers for each person to add to his/her liking.
