Easy Parmesan Kale Chips
Ingredients
1 large bunch kale, such as dinosaur/lacinato
Extra virgin olive oil or olive oil spray
Kosher or sea salt
Freshly grated Parmesan cheese (or nutritional yeast for a dairy free version)
Preparation

Preheat the oven to 350 degrees F.

Line 2 sheet pans with parchment paper or a Silpat mat.

Remove the hard rib from the center of each kale leaf. You can do this by simply grasping the end of the stem with one hand and running your hand down the stem with the other hand. Tear into chip-size pieces and place them on the sheet pans.

Drizzle or spray them with olive oil, and toss to lightly coat (don't use too much or the chips will be too oily). Sprinkle generously with salt and bake for 10 minutes, until crispy. Sprinkle lightly with Parmesan cheese and bake for another 5 minutes.

Cool and serve.

Kale chips are super easy to make and are a much healthier alternative to processed chips! Just a few minutes in the oven is all you need for nice and crispy chips. They're a perfect snack and a great way to pack in fiber and nutrients.
