Ada Payasa

Ingredients

1 cup Ada
1 cup jaggery*
2 cups milk
4 tablespoons ghee

Preparation

Roast Ada in a tablespoon of ghee in a pan until the raw flavor vanishes and a nice aroma wafts in the kitchen. Set aside.

Add one more tablespoon of ghee and roast all the dry nuts/fruits over medium heat until they turn a light golden brown color.

Boil the 2 cups of milk to boil, then add jaggery/brown sugar and cardamom

When jaggery/brown sugar melts, add the slightly roasted Ada/Ade and 1 tablespoon of Ghee.

When Ada cooks completely, add a cup of coconut milk and the roasted dry fruits and turn off heat.

About

Payasam is a dessert made from cream, milk and coconut milk.
Ada Payasa is a famous South Indian dessert cooked mainly for special occasions or ceremonies.

Ade/Ada is basically a tiny pieces of Flattened rice partially steamed and dried....it can preserved for many days,used mainly in the preparation of Desserts..

Tip:
1)In South Canara the same Payasa is tried by adding the pieces of "Neeru Dosa" in place of Ada/Ade..Its a Dosa made from rice.
2)Payasa can also be tried with rice instead of Ada/Ade.
3)To extract the coconut milk, blend the freshly grated coconut in a blender by using little Luke warm water and then squeeze out the milk from the coconut,add this milk to payasa and discard the squeezed coconut.
