Salmorejo Chicken

Cut the chicken into small bite size pieces.

Blend the following Ingredients - Garlic,Salt,Cumin,Oregano,Parsley and Pepper.

Transfer to a large non aluminium container.

Add - Oil,Vinegar,Wine,Thyme,Bay Leaves and Chicken.

Leave to Marinate overnight.

The next day, place mixture in a large frying pan and cook slowly until the chicken is tender adding more wine if necessary.

About
I prefer the chicken dry, so I cook it until all the liquids have been soaked in and the chicken has just started to brown. You can keep a little wine/water and serve it moist if you prefer.
Serve with either papa's arrugadas or rice.
