1/2 cup chopped
leek
or red
onion
2/3 cup
salad oil
(olive)
Generous pinch of
salt
Dash freshly ground
pepper
Preparation

Be sure to remove bitter white portion of orange
peel
before making it into strips.

Combine oil, orange
juice
,
peel
strips, sugar,
salt
and pepper and leeks. Let leeks
marinate
in
dressing
for 2 hours in refrigerator.
