Scallion Butter Sauce

Ingredients

4 tablespoons butter, softened
1 fresh sweet red pepper, cut into strips
2 tablespoons chopped parsley

In a blender or food processor, combine the scallions, butter and salt and process until smooth. Scrape into a bowl.
