Tagliatelle Gorgonzola

Ingredients
4 lrgs Shallots -- chopped
cup Cherry tomato wedges
cup Prosicutto or ham strips
1 Egg
cup Crumbled Gorgonzola cheese
Or Parmesan
2 tablespoons Light cream or milk
8 ounces Pkg
Noodles -- cooked/drained
2 tablespoons Chopped parsley
Tagliatelle or med egg
Preparation

In saucepan, cook shallots in butter until tender. Add tomato wedges and prosicutto. In a separate bowl, mix egg, cheese, cream or milk, salt, and pepper. Toss to blend and cook for just a minute. In hot serving dish, combine Tagliatelle and cheese mixture. Toss to blend. Serve immediately, garnished with parsley. I have substituted zucchini for the ham with good results and also added zucchini to the original.
