Lemon Cucumber Salad

Ingredients
3 tablespoons extra-virgin olive oil
1 teaspoon chopped chile pepper
1 tablespoon chopped fresh lavender, (optional)
Salt and freshly ground black pepper, to taste
1 medium red onion, thinly sliced
1/2 red bell pepper
cut into thin strips
Red leaf lettuce leaves

In small bowl, combine vinegar, oil, chile pepper and lavender if using.

About
Lemon cucumbers are named for their round, yellow appearance, not their flavor, which is sweet and mild. If not available, choose another heirloom cucumber, such as Japanese or Armenian, for this salad.
