Cauliflower Cheese

Ingredients

50 grams flour
50 grams butter
400 ml milk
500 grams mature white cheddar grated
breadcrumbs
Splash of Worcestershire sauce
1 teaspoon English mustard
nutmeg
salt

Preparation

Break cauliflower into florets

Steam cauliflower for 5 minutes then set aside

Melt butter in a saucepan

Add flour to form a golden roux

Slowly add the milk whisking to avoid lumps

Bring to the boil continually whisking

Once a thick sauce has formed stir in 3/4 of the cheese

Add Worcestershire sauce, mustard, nutmeg, salt and pepper to taste

Spread out the cauliflower in a gratin dish

Pour over the rich yummy creamy sauce

Sprinkle remaining cheese and breadcrumbs on top

Bake at 425 Fahrenheit for about 20 minutes until bubbly and browned on top

About

A traditional English dish that works as well as a main dish by itself or a side to accompany such things as grilled or roasted fish or meat. Great to warm you up from the inside on a cold day.

Switch up the recipie by substituting different cheeses such as a blue cheese (Stilton or Roquefort) or by adding some flaked poached fish.

Yield:

1.0 pie serves 4 as a side or 2 as a main dish
