Sugar Cured Ham

Ingredients

2 cups salt
1/2 box brown sugar
6 tablespoons black pepper
2 tablespoons red pepper
Brown paper (4 feet square)
Opened white sack
White sack, sewed up
Twine
1 fresh ham

Preparation

Mix together the ingredients; rub onto the skin side first, turn over on open sack, and pack the mixture all over the ham. Be sure to pack around shank bone.

Roll up in opened sack, lace twine across the ham, then wrap in brown paper. Tie up all across the ham. Hang shank down in sack.
