Wild Salmon Cakes

Ingredients
1 pound wild salmon fillet, boneless and skinless, minced (or two 8-ounce cans of wild salmon)
1/4 red onion, diced
1 teaspoon capers
1 egg
1/2 cup panko, plain crackers, or gluten-free bread crumbs
Preparation

Mince the salmon.

In a bowl, whip the egg; add the diced onion, capers and salmon until ingredients are incorporated

Add the panko bread crumbs until combined.

Form into 4 patties and place on a hot grill for about 2-3 minutes on each side, or in a 350 degree oven for 15-20 minutes.

About
These are excellent served as a main dish on a bed of greens lightly tossed with a vinaigrette, or simply alongside grilled vegetables. As an hors d'oeuvres simply make the patties a bit smaller. Mix some lemon juice and dill with a bit of non-fat mayo for a light and tasty dressing.
