Spinach Cooked With Onions

Ingredients

2 pounds spinach, washed and trimmed
1 large onion, peeled
4 tablespoons ghee or vegetable oil
1/2 fresh, hot green chili, finely chopped
1 teaspoon salt
1/2 teaspoon sugar
1/2 cup water
1/4 teaspoon garam masala

Preparation

Cut the spinach into 1/2 inch wide strips.

Chop the onions finely.

Heat the ghee in a large pot over medium high heat.

When hot, add onions and cook for 3 minutes.

Add chopped spinach, green chili, ginger, salt, and sugar. Cook for 5 minutes.

Add 1/2 cup water and bring to a simmer.

Cover tightly, turn heat to low, and cook for about 10 minutes.

Uncover and boil away some of the extra liquid.

Sprinkle garam masla over the top and mix..
