Lemon and Garlic Roasted Potatoes
Ingredients
1 bag of Teeny Tiny potatoes (from trader joes) or 1 pound of your fav potatoes
4 cloves of Garlic
1 bunch of italian parsley
Juice of 1-2 lemons (depending on your liking of lemon juice)
Preparation

Kiddo: Wash the potatoes with a scrub and for the ones that are big, have the parent cut them in half.

Kiddo: Place the potatoes in a bowl and mix with 1 teaspoon salt, 1/2 teaspoon lemon pepper (or you can use regular pepper) and 3 tablespoons olive oil. Mix with your hands.

Parent: Place the potatoes on a baking sheet and bake for 30-40 minutes, until golden brown on one side. Half way through the baking process, mix the potatoes around.

Kiddo: (ask for help from parent when needed, encourage asking for help) peel the garlic and wash the parsley.

Parent: Place the parsley and garlic into a small food processor and chop, till finely chopped. Then place mixture into the bowl.

Kiddo: Squeeze the juice of 1.5 lemons into the bowl with the parsley and garlic mixture. (use the other half of lemon at the end, if you still want a more lemony taste)

Parent: Take the potatoes out when lightly browned and ready. Let it sit for 10 minutes, then place the potatoes onto serving dish.

Kiddo: Toss the lemon/parsley/garlic mix in with the potatoes. Mix it all around with a spoon.

Parent: Taste it to see if you would like a more lemony taste or more salt or pepper.

You can eat it warm or let it cool and eat it at room temperature. Enjoy!
