Saganaki...Greek Cheese Appetizer

Cut cheese slices in half, diagonally and place in a small container, and pour 1 oz Ouzo over it, cover and refrigerate for 2 hrs

After 2 hrs remove from fridge

Ignite with a lighter and allow flames to burn for a few seconds

Throw lemon wedges into pan and yell "Opa!"...yes this is required!

Serve immediately, right out of the pan with greek pita wedges

Saganaki is a popular appetizer in most greek restaurants because with the presentation comes a bit of a fire show...but its the taste of the cheese prepared in this manner that will make you come back for more!
