Bully Beef

Ingredients

1 can corned beef or equal amount of any leftover meat
1 medium onion sliced
2 green onions chopped
2 sprgs fresh thyme or 1 tsp. dried
1 medium ripe tomato chopped
1 habanero chili (scotch bonnet) seeded and chopped or jalapeno to taste
1 tablespoon vegetable oil

Preparation

Heat oil in heavy skillet over moderate heat. Add onions, garlic and chopped scotch bonnet; sauta until onions are translucent.

Add corned beef and thyme. Reduce heat to medium-low and cook, stirring occasionally until thoroughly heated. Add green onions and chopped tomato; cook two minutes more.

I love to serve them topped with fried or poached eggs.
