Beef Goulash

Ingredients

500 grams beef, fillet
teaspoon black pepper, ground
1 tablespoon paprika, sweet
2 tablespoons vegetable oil
1 tablespoon butter
2 onions, medium
2 tablespoons flour, plain
1 cup red wine
1 beef stock cube
cup cream
teaspoon thyme, chopped

Preparation

Cut the meat into strips 2 inches long and 1/4 inch wide. Sprinkle the strips with pepper and paprika.

Heat the oil in a large fry pan and add half the meat, cooking and stirring over high heat until meat is well browned, about 3 minutes.

Transfer the meat to a plate. Repeat with remaining meat.

Slice onions and chop tomatoes.

Add the butter and onion to the fry pan and cook until soft. Sprinkle with flour and stir. Add the wine, tomatoes and stock cube, stirring. Cook for about 4 minutes. Add the cream and sour cream, stirring rapidly.

Add any juices that have accumulated around the meat. Add the thyme. Cook for about 2 minutes, stirring constantly.

Return the meat to the pan and heat through for 1 minute.

Serve with buttered noodles or rice.
