Herbed Potatoes

Ingredients
1 1/2 pounds small red potatoes
1 1/2 teaspoons olive oil
6 sprg rosemary
6 sprg thyme
2 tablespoons white wine
2 1/2 teaspoons paprika
Preparation

Preheat the oven to 400 degrees. Wash and scrub the potatoes. Cut each potato in half.

Place about 1/2 cup of potatoes on 6 squares of foil large enough to fold over. Divide the olive oil, herbs, wine, and paprika evenly over each packet. Seal the packets and place in the oven.

Bake for 30 minutes. Let cool for 5 minutes. Place a packet on each plate and let each person carefully open the packet.

A good company dish. If you do not want to bother with six packets of foil, just make one, or use this as an ingredient suggestion for roasting the potatoes without foil.

I really loved the simplicity but would have enjoyed a bit more depth to this dish. My husband mentioned that a sprinkling of parmesan could possibly have given these potatoes that little extra something that seemed to be missing. Thanks for sharing.
