Bacon 'n' Cheese Muffins

Ingredients

2 slices Bacon (cooked and diced)
3/4 cup Milk
50 grams Butter (melted)
2 tablespoons Chives or Parsley (chopped)

Preparation

Preheat oven to 190°C / 375°F and grease a muffin pan.

Fry bacon and set aside on paper towel to cool and drain. Dice bacon into small pieces and set aside. Melt butter and set aside. In a bowl, beat eggs and add the milk, melted butter, salt, pepper and chives. Sift in flour and stir until combined. Add bacon and cheese and stir through until mixed.

Spoon mixture in to the muffin pan and bake for 25 minutes.

Delicious savoury muffins.
