Avocado Shirazi Salad

Ingredients

2 large tomatoes, chopped
1/4 cup red onion, diced
1 cup cauliflower, chopped
1 avocado, chopped
1/8 cup fresh parsley, diced (can also use fresh cilantro or fresh t
4 tablespoons olive oil
juice from 1 large lime
salt & pepper to taste

Preparation

Chop and put in serving bowl the english cucumber, 2 large tomatoes, 1/4 cup red onion, 1 cup cauliflower, and 1 avocado.

Whisk in a small bowl fresh parsley, olive oil, juice from 1 large lime, salt & pepper to taste.

Combine & toss the salad. Enjoy!

This is a twist to the Persian Shirazi salad my family loves. Typically served with cucumbers, tomatoes and red onion, we added creamy avocado and crunchy cauliflower to make it even more nutritious and delicious!
