Paleo Vanilla Wafers
Ingredients
2 egg yolks
¼ cup olive oil
1 teaspoon vanilla extract
1/2 cup agave nectar
½ teaspoon salt
2 cups almond flour
½ teaspoon baking powder
Preparation

In a bowl or mixer, combine the oil, egg and vanilla extract. Add the almond flour, baking powder, salt and agave. Mix until it comes together in a ball and does not stick to your fingers, but is moist.

Place the dough on a large piece of parchment paper and form a cylinder (about 1.5” in diameter). Wrap the dough cylinder tightly in the parchment paper and place in the freezer for half an hour or in the refrigerator for at least an hour.

Preheat your oven to 350 degrees. Remove the dough from the freezer/fridge and using a sharp knife, cut ¼” rounds and transfer to a cookie sheet. Bake for 12 minutes or until the tops are slightly golden.

This recipe did not work. Cookies fell apart. You also mention agave in mixing but it is not in the list of ingredients?? How much? Maybe that is what was missing??

Hi Cary,
So sorry to hear it didn't work out for you! My apologies about the agave being left out of the ingredient list. I used 1/2 cup of agave nectar. Did you form a cylander, wrap it tightly and freeze or refrigerate it? This step is key for shortbread-style cookies. Let me know.
