(Mama's) Goulash

Ingredients

500 inches 700grams stew beef (cubed ½- ¾)
3 teaspoons approx. paprika
large can chopped tomotoes
1 tablespoon oil
1 green pepper (capsicum if ya Aussie)
3/4 bay leaves

Preparation

Fine chop onions and saute in oil

Add paprika (of heat, you don't want to burn paprika!) and stir in well

Stir in cubed stew beef

A bit of ground pepper

Add can tomotoes and simmer for 30 min.

Add potatoes (whole or cut in half and/or peeled if you like)

Add carrots sliced (good chunky slices)

Green pepper (nice chunky pieces)

Add bay leaves

Add water till potatoes almost covered

Bring to boil and simmer for another 20 min. or so

Always keep lid on pot

About

This is from my mothers (she was polish but married to a hungarian) receipe book. She taught me to cook by feel rather than exact measurements. It was always = if it looks like this or tastes liker this or has this consistency etc. One hint don't use to much paprika - that's a mistake most people make. If I have a bit of bacon fat around I will also use this to saute the onions. Enjoy on a nice winter day!
