Roasted Mangalitsa Jowl, Serve On Toast

Ingredients

4 tablespoons Chinese Rose Wine
4 tablespoons water
4 tablespoons light soy sauce
2 tablespoons red curry paste
2 slices young ginger
1 pinch fleur de sel

Combine ingredients

Marinate jowl overnight.

Roast in oven at 375 until golden brown

Wrap in aluminum foil and freeze over night

Slice to 3 mm using a Japanese medallion slicer

Air dry in fridge for 1 week

Char on toast

About

Use a torch to create a little bit of char and turn the fat transparent. The melted fat gets soaked up by the toast. Topped with a little bit of fleur de sel. It smells divine and taste even better.
