Gluten Dairy Free Corn Meal Muffins

Ingredients

1 cup Corn Meal (Bob's Red Mill a guaranteed gluten free corn meal
1 1/2 cups brown rice flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon xanthan gum
1/2 teaspoon salt
2 eggs or egg replacement (Ener-G makes a good one)
1/2 cup apple sauce
3 tablespoons melted butter

Preparation

Preheat oven to 350 degrees.

Combine all dry ingredients in large bowl and mix well.

Add rice milk, eggs, apple sauce and melted butter together and mix well.

Combine wet ingredients with the dry and stir until fully incorporated.

Dollop into paper muffin cup about 2/3 full.

Bake for 15 - 18 minutes or until a toothpick comes out clean.

About

Amazingly light and fluffy, people are surprised these muffins are gluten free. They will keep well for a day or two if they are loosely wrapped and left at room temperature.
