Egg-less Chocolate Cake 2
Ingredients
2 cups whole wheat flour (yes whole wheat/ Gehu ka atta)
1 cup sugar
1/2 teaspoon soda
1 teaspoon baking powder
2 tablespoons cocoa
1 tablespoon drinking chocolate
1/2 teaspoon instant coffee (my addition)
1/2 teaspoon vanilla essence
2 tablespoons butter (I used salted butter)
1/2 cup curd
1/2 cup +1/3 milk (I used 1 cup)
2 1/2 grams Eno’s salt
Preparation

Melt the butter totally add the curds and milk. Mix well and keep aside.

Mix all the dry ingredients except the Eno’s salt in a big bowl.

Add the butter mixture. Mix well. It is okay if the mixture is soft dough consistency the sugar will melt. Keep aside for 4 hours.

Grease a huge container. Mix the Eno’s salt in the batter and transfer to the container.

Microwave for 10 minutes or till the knife inserted comes out clean.

What is "drinking chocolate"? Also, what is "Eno's salt" and why does it matter?

Drinking chocolate's ingredients are cocoa and sugar. Eno's salt is epsom salt. Drinking chocolate gives a nice colour to the cake. So I generally use it. Eno's salt is something that is extremely effervescent. It helps the cake rise especially in the absence of eggs. The curds or yogurt and the enos salt allow the cake to rise.
