Cauliflower Gratin

Ingredients
10 cups Water
1 cup Milk
2 teaspoons Salt
2 Cauliflower heads, cut into
Flowerets
3 tablespoons Olive oil
1 tablespoon Lemon juice
1 teaspoon Drained capers
1 teaspoon Anchovy paste
1 teaspoon Dijon mustard
1 cup Fresh bread crumbs
1 cup Parmesan cheese, grated
Preparation

In a large saucepan bring water, milk and salt to a boil; add cauliflower and simmer for 4 minutes or until crisp-tender. Drain and rinse the cauliflower under cold running water.

Coat jelly-roll pan with non-stick cooking spray and arrange the cauliflower flowerets in single layer on pan.

In a blender, combine the oil, lemon juice, capers anchovy paste and mustard; blend until smooth.

Drizzle the blended mixture over the cauliflower. Sprinkle on bread crumbs and layer the Parmesan cheese.

Bake on the upper rack at 350 degrees Fahrenheit for 45 minutes or until crisped and heated through.
