Italian Baked Eggs

Ingredients

1 tablespoon olive oil
1/2 medium onion minced
4 slc bacon cooked crisp,
and crumbled
1/2 cup shredded low-fat cheese
1 cup fresh or frozen spinach chopped
1/4 teaspoon freshly-ground black pepper
1/2 teaspoon seasoning salt

Preparation

Heat the oven to 350 degrees. Heat the oil in a small skillet and saute the onion for 3 to 4 minutes.

Beat the eggs and egg whites and stir in all ingredients, including the onion. Pour mixture into a nonstick quiche pan. Bake for 20 minutes. Check with knife to assure the loaf is done throughout.
