George Washington Carver Peanut Recipes: No. 2, Peanut Soup Number Two

Ingredients

1/2 pint roasted peanuts, grind or mash real fine
1 quart of milk
1/2 teaspoon salt
1 small onion, minced very fine
1 stalk of celery, chopped very fine or a saltspoon celery seed.
1 tablespoon corn starch

Preparation

Cook for 15 minutes. Great care must be exercised to keep from burning.

Moisten 1 tablespoon of corn starch in a quarter cup of cold milk; add to the soup; stir until thick and smooth; strain through a fine sieve, and serve with peanut wafers.
