Indian-Style Sandwiches

Ingredients
1 1/4 cups fresh, soft cheese
cup thinly sliced carrots
1 small tomato, seeded and diced
1/2 cup diced green bell pepper
1/2 cup thinly sliced cucumber
cup mixed fresh herbs, such as parsley, basil, dill or mint
1 tablespoon candied ginger
1/2 teaspoon TABASCO Sauce
Salt to taste
4 pita bread pockets, sliced in halves

In medium bowl, combine all ingredients. Serve in pita bread pockets.

Farmer cheese, ricotta, goat cheese or cottage cheese work well in this sandwich.
