Artichoke Appetizers

Ingredients
1 pkt BIRD'S EYE Deluxe Artichoke Hearts (10 ounces) cooked
according
to package directions and drained
1 tablespoon butter
2 tablespoons chopped onion
teaspoon minced canned garlic
cup parmesan cheese
cup lite mayonnaise
cup plain yogurt
cup toasted pecans
6 English muffins split in half
Preparation

Place artichokes, butter, onion, garlic, cheese, mayonnaise, yogurt, pecans and hot pepper sauce in food processor.

Pulse 4 to 5 times or until coarsely chopped.

Divide mixture between muffin halves.

Place under broiler for 3 to 5 minutes or until mixture is hot and bubbly.

Cut each muffin half into quarters.

Makes 48 appetizers.

My artichoke appetizers are good. From CA.
I use the jar of marinated rather than non -marinated. Adds more flavor.
Slice a baquette. Half will do a crowd.
Place 'half' a heart on each slice.
Mix lowfat mayo, one part to three parts freshly grated parm reggiano.
Top each heart
Place on baking sheet
Broil, watch closely..
(One in a crowd will be picky.
Just marinate the bread for "them" with some marinade from the jar, unused.
Place a bit of the freshly grated Parm on bread..Voila:)
