Cheesy Bacon Fig Bombs

Recipe: Cheesy Bacon Fig Bombs

Cut the fresh fig in half.

Make a small ball of goat cheese and gently push into fig's soft soft center. (Think: avocado seed in an avocado).

Cut the bacon in half (or use whole slice if crazy about bacon)

Wrap the fig and cheese with bacon, leaving a little overlap.

Place the cheesy little bacon fig bombs in a broiler safe pan.

Broil.

Turn over gently as bacon browns.

Remove from heat when bacon is browned (but not crazy crispy) and cheese is gooey and figs warmed.

Let them cool a bit, and then eat them with your fingers.

Chew slowly, savor, swoon and say, “pass me another.”

Recipe: Figs wrapped in bacon stuffed with goat cheese

If there are figs in your fridge or on your tree, do I have a recipe for you: cheesy bacon fig bombs.

Simple, salty, sweet, savory and delicious, figs stuffed with goat cheese wrapped in bacon is about as good and simple as a recipe gets. Three ingredients, minimal prep time, and an explosion of textures and flavors.

A note about prosciutto: I love prosciutto but I wouldn’t substitute the bacon with it, broiling dries it out like shards of jerky and ruins it in my opinion. If you want to use it, first broil the fig and cheese only and then wrap with room temperature prosciutto once out of the oven. (Still not as good as bacon in this recipe.)
