Purim Poppy Seed Hamentaschen

Ingredients

Dough:
300 grams plain flour
1/2 teaspoon baking powder
100 grams icing sugar
1 teaspoon vanilla extract
200 grams cold butter
1/4 cold milk (you may need bit more)
Icing sugar for sprinkling on top after baking
Filling:
100 grams sugar
lemon zest, to taste (I used zest of ½ lemon)
50 grams raisins, chopped fine with knife (optional)
100 grams honey

Preparation

Sieve together twice the flour, baking powder, icing sugar, and a pinch of salt.

In a food processor, add the above dry ingredients and cubed cold butter; pulse to get a crumb-like mixture. Add vanilla extract, then add milk as needed to get soft dough but not too soft. Do not over mix . Remove and flatten the mix on plastic sheet, refrigerate it for two hours (can prepare it and keep over night) .

Roll the dough between two sheets of baking wax paper lightly dusted.

Cut out circles with round 6 cm cookie cutter

Put 1 teaspoon of the filling in the middle of each circle.

Fold up the sides to make a triangle. (pinch the lines)

Bake at 175 C for 15 - 20 minutes ( i used turbo mode) until light gold.

Cool. dust with icing sugar.

Filing: In small pan, add sugar, milk or orange juice. bring them to a boil. Add poppy seeds, lemon zest, raisins cook on low fire until the mixture is tick. remove and add honey. stir let it cool before using.
