Easy Red Velvet Cake

Ingredients

For the Cake
4½ Cups All Purpose Flour
¼ Cup Unsweetened Cocoa Powder
2 teaspoons table salt
1 Cup Unsalted Butter, Softened
3 Cups Sugar
4 Large Eggs
2 Cups Buttermilk
6 Tablespoons red liquid food coloring
2 teaspoon Vanilla extracts
2 teaspoon distilled white Vinegar
2 teaspoon baking soda
1½ toasted Pecans, coarsely chopped
For the Frosting
For frosting:
½ cup plus 1 tablespoon all-purpose flour
1⅛ teaspoons table salt
2¼ cups whole milk
2¼ cups salted butter, softened
2¼ cups extrafine granulated sugar (or sifted powdered sugar)
3 teaspoons vanilla extract

Preparation

Stay Pans in the oven

Preheat oven to 350' F

Spray the pans and parchments with nonstick cooking spray

Whisk the flour, cocoa, and salt in a bowl to combine

Beat the butter and sugar in a bowl with an electric mixed at medium speed, until fluffy (5 min)

Add Eggs one at a time (mixing for 30 sec per egg)

Add Buttermilk in 2 to 3 equal additions

Mix coloring and vanilla extract one at a time.

Combine Baking Soda and White Vinegar in a separate bowl, then add to the Cake Batter

Divide the batter evenly among the four pans

Bake until cake springs back when touched (30 to 35 min)

Cool the cake for 10 minutes

For frosting, start combining flour, salt, and ¾ cup milk in a saucepan

Whisk until smooth

Whisk in the remaining milk

Cook over medium heat until thickened, whisking occasionally

Remove from the heat, transfer to a bowl, and cool completely.

Beat the butter and sugar in a large bowl with an electric mixer until light and fluffy

Add the vanilla and the cooled milk mixture

Beat until light and fluffy and no longer grainy

Store in the refrigerator

Bring to room temperature, and beat again before using.

Spread the frosting one layer at a time. Add another layer and so on until the whole cake is filled with frosting

Cover the top and sides with remaining frosting
