Wheat Berries

Also known as unprocessed whole wheat, wheat berries are generally presoaked and precooked before using in a recipe. Wheat berries still remain decidedly crunchy. They are high in protein and B vitamins and low in calories. Fully cooked wheat berries may be eaten as is, with vegetables orin a salad. They can also be used for texture in breads or as a binder in meat loaf.

Cooking Guide: Soak overnight to reduce cooking time. Cook 1 cup in 3 1/2to 4 cups of water for 50 to 55 minutes.
