Chicken With Roasted Lemon Sauce and Broccoli

Ingredients

1 large head of broccoli cut into florets
1 lemon thinly sliced
2 tablespoons of butter
1 teaspoon of sugar
all purpose flour
2 cloves of garlic minced
2 tablespoons dry white wine
olive oil
pepper
1 tablespoon chopped parsley

Preparation

Preheat oven to 350 degrees

Place lemon slices on a baking sheet

Brush a little olive oil on each slice and sprinkle with salt and a little sugar

Add broccoli to the other side of the same baking dish

Toss broccoli with olive oil, garlic, salt and pepper

Roast for 20-25 minutes or until the broccoli and lemon slices begin to brown

Using a mallet or pot, pound the chicken breasts until thin

Salt and pepper each piece on both sides

Dredge each in flour making sure to shake off any excess flour

Place in a medium-high skillet with enough olive oil to coat the bottom

Cook the chicken breasts until golden brown on each side

Add wine and scrape the bottom of the pan for one minute

Add chicken stock and bring to a boil for 5 minutes

Add the butter, lemon slices, most of the parsley and a touch more salt and pepper

Cook for about 2 minutes and then serve chicken next to the broccoli

Spoon sauce over chicken and broccoli

Top the chicken with some lemon slices and sprinkle the remaining parsley
