Saffron Brown Rice

Ingredients

2 1/2 cups water
1/2 cup chopped onion
1 (3 inch) stick cinnamon
1/8 teaspoon saffron threads, crushed
1 cup uncooked brown rice

Preparation

Combine first 4 ingredients in a medium saucepan, bring to a boil. Stir in rice. Cover, reduce heat and simmer 45 minutes or until liquid is absorbed and rice is tender. Discard cinnamon stick. Fluff with a fork and serve immediately. (Measure 1 cup servings.) Single serving = 1 cup starch.
