Crockpot Refried Beans For A Crowd

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

1 inch sweet onion (cut half but not chopped)
2 teaspoons salt
1 teaspoon black pepper
3 teaspoons chili powder
6 slices of crisp bacon (crumbled)
1 teaspoon ground cumin
1/2 fresh jalapeno (seeded and chopped)
9 cups water

Preparation

Put everything in the crockpot and cook on high for 8 hours or till tender. Drain but reserve liquid. Put drained beans into food processor and puree, adding just enough of the reserved bean liquid to make the beans the right consistency. Keep warm in the crock pot.

CROCK POT REFRIED BEANS FOR A CROWD
I first posted this about a year ago, and I've been tweaking it a little since then. It makes a lot of refried beans, but I'm sure they would freeze well if vacuum packed. They taste delicious and are even better the next day. I don't buy canned refried beans anymore because these are so easy to make!
