Chewy Gingersnaps

Ingredients

4 cups flour
3 teaspoons ginger
1/2 teaspoon cloves
2 1/2 cinnamon
4 teaspoons baking soda
1 teaspoon kosher salt
3/4 cup oil
1/4 cup plus ⅓ softened butter
1 cup brown sugar
1 cup white sugar
2 eggs
1/2 cup molasses
Extra white sugar for rolling the cookies in

Preparation

Preheat oven to 325 F (160 C)

In a large bowl, stir flour, baking soda, salt and spices together

In another bowl, cream the butter, oil and sugars together.

Beat in the eggs one at a time, followed by the molasses

Stir in the dry ingredients until everything is well mixed.

Shape the dough into small balls and roll in sugar before placing on a baking tray that has been lined with parchment paper.

Bake for 8 minutes (they will still seem a bit underdone when you first take them out).
