Bengali Vegetables

Ingredients

675 grams made up of equal quantities of bengali vegetables for example 4 tablespoons ghee
small pieces red pepper
1 tablespoon fresh coriander
1 salt to taste.
teaspoon wild onion seed
teaspoon white curnin seed
teaspoon fennel seed
teaspoon mustard seed

Preparation

Prepare the vegetables and blanch them.

Heat the oil stir fry the spices for 1 minute then the onion for 3 or 4. Add optional items for colour red pepper and fresh coriander.

Add the vegetables and toss until hot.

Add a little water if required.

A very quick and simple dish to cook. Blanch the vegetables of your choice and stirfry with this special Bengali niix of five spices called panch phoran. Serve crisp crunchy and piping hot as a healthy vegetarian main dish with rice.
