Chocolate Oatmeal Chocolate Chip Cookies
Ingredients
2 cups flour
2 cups rolled oats
1 Tbsp baking powder
2 tsp baking soda
1/2 tsp salt
1/2 cup unsweetened cocoa powder
2 sticks unsalted butter, room temp
3 eggs
1 Tbsp vanilla extract
1 1/2 cups brown sugar
1/2 cup granulated sugar
2 1/2 cups chocolate chips

Preheat your oven to 375 degrees.

In a large bowl, using a hand mixer, cream together the butter, brown sugar and granulated sugar until well combined.

Add in the eggs and vanilla and mix until well combined, light and fluffy.

In a small bowl mix together the flour, baking powder, baking soda, rolled oats, salt and cocoa powder.

Add half the dry mix into the wet mix and mix until mostly combined. Add the remaining dry ingredients in and again mix until just mostly combined {you don't want to over mix}.

Add in the chocolate chips and stir in with a spoon or rubber spatula.

Using a small cookie scoop, scoop out the dough about an inch apart onto a parchment lined baking sheet.

Bake for apron 12-14 minutes. Cool slightly on the pan then cool completely on a cooling rack.

Repeat until all the dough is baked off.

Yields approx 5-6 dozen {don't worry you'll easily find friends to share with, if you decide to share at all wink wink}

I have to pat myself on the back here for a second, I have certainly improved in my cookie recipe making recently. I not only gave these Chocolate Oatmeal Chocolate Chip Cookies to Jacks teachers but I also brought them up to my father in laws last weekend… HUGE HIT!!! I love the double dose of chocolate, the cookie itself and the chips throughout. Now, that oatmeal… I really love oatmeal in a cookie, I think it adds a nice chew and heartiness to the cookie!!
