Thai Green Curry Paste

Ingredients
2 shallots, chopped
2 tablespoons fresh ginger, peeled and grated
2 garlic cloves, crushed
small bunch of fresh coriander, with stems
2 lemongrass stalks, chopped
1 lime, grated zest and juice
8 kaffir lime leaves, torn into pieces
1 tablespoon galangal, peeled and chopped
1 tablespoon coriander seeds, crushed
1 teaspoon ground cumin
1/4 teaspoon ground Turmuric
1 teaspoon black peppercorns, crushed
2 teaspoons fish sauce

This green curry paste is a very common ingredient in Thai cooking. You can vary the spice by increasing or decreasing the amount of chili you use.
