Sauteed Minty Peas

Ingredients

1/4 pound Shelling peas
8 leafs Fresh mint
1 tablespoon Olive oil
1 pinch Black pepper
1 pinch Sea salt

Preparation

Shell peas

Saute peas in olive oil with salt and pepper for two minutes

Remove peas from heat and allow to cool for several minutes

Toss with fresh mint leaves (note: the leaves may discolor slightly from the heat)
