Carrot and Walnut Muffins

Ingredients

1/2 teaspoon salt
1 tablespoon snipped chives
1 egg
2 tablespoons vegetable or light olive oil
3/4 cup milk

Preparation

Preheat oven to 400 degrees

Sift the flour and salt into a bowl. Add the cheese, walnuts, carrots and chives.

Beat the egg, oil and milk together and add to the dry ingredients, stirring to make a thick batter.

Fill well-greased muffin pans three-quarters of the way full with the mixture and bake for 20-25 minutes
