Stuffed Steaks

Ingredients
2 rib eye steaks, boneless
2 sm. chunks bleu cheese
1/2 cup beef broth
2 tablespoons cornstarch dissolved in 1/4 cup water

Cut a thin pocket deep into steaks and insert cheese. Fry steaks in oil quickly until crisp on the outside yet a bit rare inside. Remove from pan. Pour Madeira wine into pan; boil down a bit. Add beef broth and mushrooms.

Cook for 10 minutes. Thicken a bit with cornstarch mixture and return steaks to the pan to heat briefly. Serve with sauce and mushrooms.
