Almond Poppy Seed Cake
Ingredients
2 ¼ c sugar
3 large eggs
1 ½ c milk
1 c vegetable oil
1 Tbsp almond extract
1 ½ tsp vanilla
3 c flour
1 ½ tsp baking powder
½ tsp salt
4 ½ tsp poppy seeds
Icing
3 c powdered sugar
1/3 c melted butter
3 Tbsp milk
½ tsp almond extract
Preparation

Preheat oven to 350 degrees.

Beat sugar & eggs until creamy.

Add milk, oil, almond extract, & vanilla.

In a separate bowl, combine flour, baking powder, salt, & poppy seeds.

Combine wet & dry ingredients.

Pour into greased & floured jelly roll pan.

Bake 20-25 minutes or until toothpick comes out clean.

Cool until slightly warm.

Spread with creamy icing.

If it has too much almond flavor for you, switch the amounts of almond & vanilla in the cake & replace the almond with vanilla in the icing. Enjoy!
