Ingredients

olive oil
2 clv
garlic
, bruised

onion
, chopped

carrot
, chopped, (rolling cut is nice)
1 fresh sprig
rosemary
, chopped or 1/2 tsp dried
rosemary<
1 zest of one
lemon
1/2 cup
apple
, juice
Preparation
1
Heat
the oil in a frypan over high
heat.
Add the garlic and onion and cook for 2 minutes.

Add the
carrots
, rosemary and lemon
zest
and cook for 2 minutes more.

Add the apple
juice
and cook for 3 more minutes, until almost all of the liquid has evaporated.
