Apricot & Banana Compote

Ingredients

200 milliliters Apple Juice
200 milliliters Water
50 grams Sultanas
1 tablespoon Lemon Juice
2 tablespoons Ground Almonds

Preparation

Dice the apricots into bite size pieces

Put apricots, apple juice and water into pan.

Bring to the boil, cover and simmer for 20 minutes.

Take off the heat tip into a bowl and set aside to cool.

Peal and then chop the bananas into bite size pieces.

Put banana into a bowl and add the lemon juice, making sure that the banana is well coated.

Add bananas and sultanas to the cooled apricot mixture.

Sprinkle ground almonds over the top to serve.

About

I love dried apricots, just before Christmas 2010 I had an operation on my jaw, so, not allowed to chew anything for the next 6 months.
I started to play around with the dried apricots and this is the recipe I finished with. the rest of my family like it, I couldn't get them to eat dried apricots before, now they just want more.
