Chicken Soup

Ingredients

1 whole chicken, giblets
3 stalks celery
Salt to taste
Pepper or seasoned pepper to taste
1 pound carrots, peeled and sliced
1 lg. onion, peeled cut 4 slits on top
1/2 bunch fresh parsley

Preparation

Cut chicken into quarters

Put all ingredients in a large pot. Cover with water and 2 inches above. Bring to a boil. Simmer about 1 1/2 hours or until tender.
