Ingredients
5 punnets fresh strawberries, hulled
2 cups
sugar
Preparation

Place the hulled strawberries in heavy large saucepan and
mash
coarsely. Cook the strawberries over a medium
heat
until the mixture is beginning to
thicken
,
stirring
frequently, about 6 minutes.

Reduce
the
heat
to low. Add 2 cups sugar and
stir
until the sugar has
dissolved.
Increase the
heat
to medium and
boil
gently until the mixture
thickens
and mounds on
spoon
,
stirring
frequently, about 20 minutes.

Remove the saucepan from the
heat.
Cool
.
4
(Preserves
can
be prepared 1 week ahead.
Refrigerate
in an airtight container.)
