Chilled Vegetables

Ingredients

frozen mixed vegetables as many large bags as needed
1 cucumber per bag of veggies
green onions to taste including the green part
5 fresh plum tomatoes
low-fat or non-fat mayonnaise
salt and pepper

Preparation

* (Not the fancy varieties, just the ordinary diced kind)

Parboil the vegetables (don't let them get too cooked)

Drain the vegetables well.

Dice and add the cucumber, tomatoes, and green onions.

Mix in the mayo to bind it together.

Salt and pepper to taste. For some reason it needs a heavier hand than you'd think with the pepperChill well.

NOTES : Hello everyone. I'm sending a suggestion for an easy Thanksgiving vegetable. It's great because it doesn't take up stove space or time on the big day. Reggie and Jeff may find it helpful on their camping trip too. I first tasted this years ago at Marshall Fields' tearoom in Chicago and adapted it. Sorry I don't have exact ingredients. This is always requested at holiday meals.....even kids like it.
