Eton Mess With Pomegranate Juice

Ingredients
4 cups strawberries
2 teaspoons granulated sugar or vanilla
2 teaspoons pomegranate juice
2 cups whipping cream
4 small packaged meringue nests
Preparation

Hull and chop strawberries. Put in a bowl and add sugar and pomegranate juice; leave to macerate while you whip the cream.

Whip the cream in large bowl until thick but still soft. Roughly crumble in 4 of the meringue nests. You will want chucks for texture as well as a bit of fine dust.

Take out about half a cupful of the chopped strawberries and fold into the meringue cream.

Arrange on four serving plates or in glasses in a mound. Top each with some of the macerated strawberries
.
